While for many a cook, serving up the fanciest and most delicious meals is the final aim, Rudolf Brand has an extra aim : fighting food waste. He believes that with his dishes, he can have a big influence on people's way of thinking about food and food waste.
With 22 years of experience, including Michelin-starred restaurants in London and Amsterdam, he has seen a lot of food wasted in his career. So what is the best way to prevent this? For him,it really comes down to one important thing:"Rather than think about what you want to cook, look at the remainder, what's avail. able, and then make a menu. Many people concerned with what they eat would immediately say the former, perhaps mentioning an unclear concern with "processed food" Such food can often be delicious. And there is much to cheer about: being cheap and plentiful calories, when for most of human history they were neither. But as Chris van Tulleken's new book, "Ultra-Processed People", explains that cheapness and plentifulness come at a cost.
Mr van Tulleken, a doctor and television presenter, tells the difference between "ultra-processed food" (UPF) and "processed food". Almost everything people eat is processed in some form \therefore rice is harvested, animals are butchered (J$).
